Date Night Dinner!

So I wrote this post back in January but was wayyy to lazy to finish it...being a food blogger is a lot of work!...so this is how I will roll from now on...cook a meal...document it...wait 4.5 months...then post. That is my new food bloggin style ;)



Hello all!

The Manfriend and I try and have appy date nights at least once a month. We spend the evening going back and forth each making one appy at a time and chatting and drinking wine. It spreads the evening out and lets us try lots of new recipes in one night.

The last few date night have some how evolved into me drinking wine and chatting while the Manfriend makes all the appies. To repay him for all his efforts last night I owned appy night (it helped that it's sober Janaury which allowed me to focus a little better ;) Anyways on the menu

Salt and Vinegar Kale Chips

Sweet Potato Chili Fries

Vegetarian Pizza with Flour-Free Cauliflower Crust

Ambitious I know...

So as Shaun played with looked on the meal began, first on the list, the Sweet Potato Fries.

Chop Chop Chop

Olive Oil, Pueblo Bean Mix, Taco Seasoning and Baaaake

Top with a little homemade Chili...Crazy Messy, Crazy Good!

Then it was on to this so called "Cauliflower Pizza Crust"....I had been eyeing up this recipe for a while and finally decided to give it a whirl.

Grate raw Cauliflower into microwavable bowl (I found this therapeutic for some reason, like popping bubble wrap!) Then steam cauliflower in microwave until it makes the house smell like garbage...it's true, steamed cauliflower does NOT smell good!

add an egg, cheese, and spices...and mix'er' up! Note the magical changing colour bowl


Flatten mixture out out "Pizza style" on greased pan...push aside your increasing levels of skepticism that this will actually work and throw that sucka in the oven! (Please note the kale chips in background...I'm too lazy to post about their creation)

My response when opening the oven..."Holy Crap is that pizza crust??!?"...Add some toppings and throw your creation back in the oven!

All in all it was a successful date night. The pizza was great. The crust got crispy, mostly due to crispy cheeseness...and seriously, how can that be a bad thing. Give it a shot, surprisingly easy...if you can handle your kitchen smelling that cauliflower garbage afterwards!

Time Out?

Well Hello...

I'm patiently waiting for my thesis to be approved by ethics so I find myself in a bit of a lull. By lull I mean I still have work, a wedding to plan and the quest for bridal fitness...but having my schedule only 85% makes me feel like I'm missing something.

I often wonder if this will always be the case for me. Will I only be completely satisfied when my life is jam packed full of busyness? I found myself looking at yoga and ESL schools for when we move to Costa Rica. Costa Rica is our pre-children, pre-adulthood adventure...will I be able to handle taking time to fully relax and get into the Costa Rican "Pura Vida" vibe? Only time will tell....

On an exciting note...Shaun and I celebrated our 1 year "Proposalversary:"...which means less then 4 mos till the big day!! Lots to do but things are coming together. I find it so hard to imagine how this day will turn out. I have been so distracted with the other things going on in my life that sometimes I forget I am getting married. My goal for the next few months is to try and figure out how the heck to be a "bride" and enjoy all the fun things that come along with it.

 The "Zees"- Nothing says love like a boob grab attempt...this should probably go in our wedding photo's :P
